suji

all-purpose flour
maida

carom seeds
ajwain

salt

red chili powder

Oil for deep frying
Instructions
In a mixing bowl, add semolina, all-purpose flour, carom seeds, salt, and red chili powder (if using). Mix well.
Add water gradually and knead the mixture into a stiff dough.
Divide the dough into small balls and roll them into thin circles or squares.
Cut the circles/squares into diamond shapes using a sharp knife or a pizza cutter.
Heat oil in a deep frying pan.
Once the oil is hot, add a few diamond-shaped pieces of dough and fry them until they turn golden brown.
Drain them on a paper towel to remove any excess oil.
Repeat the frying process with the remaining dough pieces.
Allow the Suji Namakpare to cool down to room temperature before storing them in an airtight container.
