Rava Uttapam is a popular South Indian breakfast recipe made from semolina (also known as sooji or rava). It's a quick and easy dish that can be made in minutes and is perfect for a healthy breakfast or snack.
In a bowl, mix together semolina, curd, water, salt, and red chili powder (if using). Mix well to form a smooth batter. Cover and let the batter rest for 10-15 minutes.
Heat a non-stick pan over medium heat. Once hot, spread some oil on the pan.
Take a ladle full of the batter and pour it onto the center of the pan. Spread it gently in a circular motion to form a thick pancake-like shape.
Add some chopped onion, tomato, capsicum, and coriander leaves on top of the pancake. Gently press them down into the batter.
Drizzle some oil on top and around the edges of the pancake. Cover and cook for 2-3 minutes or until the bottom is golden brown.
Flip the pancake and cook the other side for 2-3 minutes or until golden brown.
Serve hot with coconut chutney, tomato chutney, or sambar.
