In a pan, heat the grated coconut and salt on medium heat for a few minutes until the coconut is lightly toasted and fragrant. Be careful not to brown the coconut.
Add the sugar and milk to the pan and stir continuously until the sugar dissolves.
Cook the mixture on medium heat, stirring frequently, until the mixture thickens and starts to come together. It should take around 15-20 minutes.
Remove the pan from heat and let the mixture cool for a few minutes.
Grease your hands with some oil or ghee and take a small amount of the mixture and shape it into a small ball. Repeat the process with the rest of the mixture.
Allow the laru to cool completely before serving. You can store the laru in an airtight container for up to a week.
