Gulgule (also known as Pua or Pudde in some regions) is a popular Indian sweet snack made from a batter of wheat flour, jaggery, and fennel seeds. It is also referred to as Indian Doughnut and is widely prepared during festivals such as Holi, Shitla Mata Pujan, Navartri etc. Here's a simple recipe to make Gulgule at home:
In a mixing bowl, combine the wheat flour, jaggery, fennel seeds, and cardamom powder. Mix well.
Add water gradually to make a thick batter. Mix well to remove any lumps. The batter should be of dropping consistency.
Add baking powder and mix well. Keep the batter aside for 10-15 minutes.
Heat oil in a deep frying pan on medium flame.
Using a tablespoon, drop the batter in the hot oil and fry until golden brown. Fry 4-5 gulgules at a time to avoid overcrowding.
Once done, remove the gulgules from the oil and place them on a paper towel to absorb excess oil.
Serve hot with tea or coffee.
