Bamboo Shoot Curry
Assam Bamboo Shoot Curry is a spicy, tangy, and slightly sour dish that originates from the Assam region in India. It is made with tender bamboo shoots, which have a delicate and slightly sweet flavor, and a range of spices and seasonings, including ginger, garlic, green chilies, and a blend of aromatic spices like cumin, coriander, and turmeric.

Ingredients
- 1 cup bamboo shoots sliced
- 1 medium onion chopped
- 2 tomatoes chopped
- 2-3 green chilies sliced
- 1 tsp ginger grated
- 1 tsp garlic minced
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp chili powder
- Salt to taste
- 1 tbsp tamarind pulp
- 1 tsp sugar
- 1 tsp mustard oil
- Fresh coriander leaves for garnish
Instructions
- Heat mustard oil in a pan over medium heat.
- Add the chopped onions and green chilies, and cook until the onions are soft and translucent.
- Add the grated ginger and minced garlic, and cook for another minute.
- Add the chopped tomatoes and cook until they are soft and mushy.
- Add the turmeric powder, cumin powder, coriander powder, chili powder, and salt, and cook for 2-3 minutes.
- Add the sliced bamboo shoots and mix well with the spices.
- Add a cup of water, cover the pan and cook until the bamboo shoots are tender.
- Mix in the tamarind pulp and sugar, and cook for another 2-3 minutes.
- Taste and adjust seasoning as needed.
- Serve hot, garnished with fresh coriander leaves. Enjoy!
