Jolpan is a traditional Assamese breakfast dish that is popular in the northeastern region of India. Place the bowl in the refrigerator to chill for 10-15 minutes.
Serve the chilled jolpan in individual bowls, topped with the accompaniments of your choice. Some popular accompaniments include pickles, chutneys, fresh fruits, fried snacks, ginger paste, green chili paste, and grated coconut.

You can adjust the consistency of the curd-rice mixture to your preference by adding more water or curd as needed. The accompaniments can also be adjusted to your personal taste, and you can add or omit any of the items as desired.
