How is Muri made in Assam?

Muri or Murmure is not only a popular street food of Assam but also great breakfast cereal eaten avidly by people of Northeast India. Muri is used to make many popular dishes such as Jhaal Muri, Bhel Muri, Laddoo and others. But have you wondered how this beautiful low fat, everyday cereal is prepared. Today we are going to show you a simple method of how Assamese locals prepare Muri traditionally.

  • First take a bowl of Rice and add slightly salted water to it to make it wet. (we only need enough water to make the rice wet).
  • Mix rice and water thorough and then lay it down on a flat surface for some time to let it dry a little.
  • Now, take some sand/salt in a pan and heat it up, once the sand is heated up add small quantity of previously prepared rice to sand. After seconds of adding rice, the rice should start popping into white puffed rice. Once all the muri is puffed, take it out using a holed spatula, so that only muri get extracted and sand falls back into pan.
  • Repeat the above step multiple times till you run out of your soaked rice mixture.
  • Voila, your crispy, fresh, white Muri is ready to eat. Either store the muri in an air tight container or make it into your favourite snack.
