  • 1 cup Arborio rice
  • 1/2 cup dry white wine
  • 4 cups vegetable or chicken broth
  • 2 tablespoons olive oil

  • 1 garlic clove minced
  • 1 pound mushrooms sliced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions

  • Continue this process until the rice is tender and creamy, but still slightly firm in the center. This should take about 20-25 minutes.
  • Remove the pan from the heat and stir in the Parmesan cheese and butter.
  • Season with salt and pepper to taste and serve immediately.
