Ingredients
- 1 cup semolina suji or rava
- 1 small onion finely chopped
- 1 small carrot grated
- 1 small potato boiled and mashed
- 1/2 cup green peas boiled
- 2 green chilies finely chopped
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1 tbsp oil
- Salt to taste
- Water as required
- Oil for frying
Instructions
- Dry roast the semolina in a pan until it turns light golden brown. Keep it aside.
- In a pan, heat oil and add mustard seeds and cumin seeds. Allow them to crackle.
- Add chopped onions and green chilies and sauté until the onions turn translucent.
- Add grated carrots, mashed potatoes, and boiled green peas. Mix well.
- Add salt and 2 cups of water. Mix well and let it come to a boil.
- Once the water starts boiling, lower the flame and gradually add the roasted semolina while stirring continuously to avoid lumps.
- Keep stirring the mixture until the semolina is cooked and the mixture becomes thick and glossy.
- Remove from heat and let it cool down.
- Once cooled, take a small portion of the upma mixture and shape it into a round cutlet.
- Heat oil in a shallow pan and fry the cutlets until golden brown and crispy on both sides.
- Serve hot with tomato ketchup or any chutney of your choice.
