Assamese Payas (Rice Pudding)

Assamese Payas also known as Kheer or Payasam, is make by cooking rice with milk and sweetener until it is soft and creamy. The dish may be served hot or cold, and can be garnished with chopped nuts, raisins, or saffron strands to add texture and flavor.

Ingredients
  

  • 1 cup rice
  • 1 cup jaggery
  • 4 cups milk
  • 4-5 cardamom pods
  • 1/4 cup chopped nuts cashews, almonds, pistachios
  • 2 tbsp ghee
  • Water as needed

Instructions
 

  • Wash and soak the rice in water for 30 minutes.
  • Drain the water and grind the rice to a coarse paste.
  • Heat ghee in a heavy-bottomed pan and add the rice paste. Fry until the rice turns light brown.
  • Add the milk and stir well. Cook on medium heat until the rice is cooked and the milk is reduced to half.
  • Crush the cardamom pods and add to the pan.
  • Add jaggery and stir until it is completely dissolved.
  • Add chopped nuts and mix well.
  • Cook for another 5-10 minutes until the payas thickens.
  • Serve hot or chilled as per your preference.
