Ingredients
  

  • 1 cup of roasted semolina suji
  • 1 onion finely chopped
  • 1 tomato finely chopped
  • 1 green chili finely chopped
  • 1/2 inch piece of ginger grated
  • 1/2 teaspoon of mustard seeds
  • 1/2 teaspoon of cumin seeds
  • A pinch of asafoetida hing
  • 1 sprig of curry leaves
  • 2 tablespoons of oil
  • Salt to taste
  • Water

Instructions
 

  • Heat oil in a pan over medium heat. Add mustard seeds, cumin seeds, and asafoetida. Fry for a few seconds until the mustard seeds start to pop.
  • Add onions, green chili, ginger, and curry leaves. Saute until the onions turn translucent.
  • Add chopped tomatoes and salt. Cook until the tomatoes are soft.
  • Add 2 cups of water and bring it to a boil.
  • Reduce the heat to low and slowly add the roasted semolina while stirring continuously to avoid lumps.
  • Cover and cook for 5-7 minutes on low heat until the water is absorbed and the Upma is cooked.
  • Garnish with chopped coriander leaves and serve hot.
