How to make Khasi Pork Dish “Doh Khleh” in Assam Style
Assam is a state in India known for its unique cuisine and flavors. One of the most popular dishes of Meghalaya which is also greatly loved in Assam, is Doh Khleh Pork Dish, which translates to “meat with gravy”. This dish consists of pork cooked in an aromatic sauce made from tomatoes, onions, garlic and ginger-garlic paste. - 1 Skillet/ Large Pan
Ingredients
- 500 gm pork cut into small cubes
- 1 onion chopped
- 2 cloves garlic minced
- 2 green chillies chopped
- 1 teaspoon salt
- 2 teaspoons black pepper
- 2 tablespoons oil
- 2 tablespoons fat from a pig’s head
- 1 tablespoon freshly grated ginger
- 1 tablespoon chopped cilantro
Instructions
- Heat oil in a large pan over medium heat.
- Add pork cubes and cook for 5 minutes, stirring occasionally.
- Add onion, garlic, green chillies, salt and black pepper. Cook for 5 minutes.
- Add fat from a pig’s head and ginger. Cook for 2 minutes.
- Add cilantro and stir.
- Cook for an additional 2 minutes.
- Serve hot.
