How to make Delicious Sooji Masala Dosa?
Sooji Masala Dosa is a popular South Indian dish made of a fermented rice and lentil batter and filled with a spiced potato mixture. Here’s a recipe for making Sooji Masala Dosa at home:
Ingredients for the batter:
- 2 cups parboiled rice
- 1 cup urad dal (split black lentils)
- Salt to taste
Ingredients for the filling:
- 4-5 medium potatoes, boiled and mashed
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1/4 cup chopped cilantro
- Salt to taste
- Oil for cooking
Instructions for the batter:
- Soak the parboiled rice and urad dal in water for at least 4 hours.
- Drain the water and grind the rice and dal to a fine batter.
- Add enough water to make the batter to a smooth and flowing consistency.
- Cover the batter and keep it in a warm place to ferment for at least 8 hours or overnight.
Instructions for the filling:
- Heat oil in a pan over medium heat.
- Add mustard seeds and cumin seeds and let them splutter.
- Add onion and green chilies and sauté until onions are translucent.
- Add the mashed potatoes, cilantro and salt and sauté for 2-3 minutes.
- Remove from heat and set aside.
Instructions for making the dosa:
- Heat a non-stick griddle or tawa over medium heat.
- Once the griddle is hot, ladle a scoop of batter in the center of the griddle and spread it evenly in a circular motion from the center to the edges to make a thin and crispy dosa.
- Spread some oil or ghee over the dosa.
- Once the dosa is cooked, add the filling to one side of the dosa.
- Fold the dosa over the filling and press gently.
- Cook for another 1-2 minutes.
- Serve the Sooji Masala Dosa hot with chutney or sambar.
Note: You can adjust the consistency of the batter by adding more water or rice flour if needed.
