  • 1 cup mushrooms shiitake or button mushrooms, sliced
  • 1 tablespoon vegetable oil
  • Salt to taste

For the Beef:

  • 200 grams beef thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 2 cloves garlic minced

For the Sauce:

  • 2 tablespoons gochujang Korean red chili paste
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar

For Garnish:

  • 4 fried eggs
  • Toasted sesame seeds
  • Sliced green onions

Instructions
 

  • Cook the short-grain rice according to the package instructions. Once cooked, drizzle sesame oil over the rice and mix well.
  • Prepare the vegetables: sauté the carrots, zucchini, spinach, bean sprouts, and mushrooms separately in a pan with a little vegetable oil. Season each vegetable with a pinch of salt while sautéing. Set aside.
  • In a bowl, combine the beef with soy sauce, sesame oil, sugar, and minced garlic. Mix well and let it marinate for about 10-15 minutes. Then cook the marinated beef in a pan until cooked through. Set aside.
  • In a small bowl, mix the ingredients for the sauce: gochujang, sesame oil, soy sauce, rice vinegar, and sugar. Adjust the flavors according to your preference.
