Assamese Payas (Rice Pudding)

- 1 Heavy Bottomed Pan
Ingredients
- 1 cup rice
- 1 cup jaggery
- 4 cups milk
- 4-5 cardamom pods
- 1/4 cup chopped nuts cashews, almonds, pistachios
- 2 tbsp ghee
- Water as needed
Instructions
- Wash and soak the rice in water for 30 minutes.
- Drain the water and grind the rice to a coarse paste.
- Heat ghee in a heavy-bottomed pan and add the rice paste. Fry until the rice turns light brown.
- Add the milk and stir well. Cook on medium heat until the rice is cooked and the milk is reduced to half.
- Crush the cardamom pods and add to the pan.
- Add jaggery and stir until it is completely dissolved.
- Add chopped nuts and mix well.
- Cook for another 5-10 minutes until the payas thickens.
- Serve hot or chilled as per your preference.
