Lahpet khar / Thoke, also known as Burmese tea leaf salad, is a popular dish from Myanmar that combines pickled tea leaves with a variety of ingredients such as peanuts, sesame seeds, garlic, and chilies. The dish also uses Khar (made by filtering water through the ashes of dried banana skins in the Indian state of Assam) which is the alkaline ingredient that gives the dish its distinctive taste.

Burmese Tea Leaf Salad (Lahpet Khar)
Equipment
- 1 Mixing Bowl
- 1 Frying Pan
Ingredients
- 1 tbsp khar food-grade alkaline powder
- 1 tomato diced
- 1/2 onion thinly sliced
- 1/4 cup roasted peanuts
- 1/4 cup sesame seeds
- 2 cloves garlic minced
- 1-2 green chilies thinly sliced
- 2 tbsp vegetable oil
- Salt to taste
Instructions
- Rinse the pickled tea leaves in cold water and soak in warm water for about 30 minutes.
- Drain the tea leaves and mix them with the khar powder in a bowl. Knead the mixture with your hands for about 10 minutes until the leaves soften.
- Add the diced tomato, sliced onion, roasted peanuts, sesame seeds, minced garlic, and sliced green chilies to the bowl and mix well.
- Heat the vegetable oil in a pan and add the tea leaf mixture. Stir-fry for a few minutes until fragrant.
- Add salt to taste and serve as a side dish or appetizer.
