  • 2 Cups Banana Peels Sun Dried
  • 1 cup Pumpkin Chopped
  • 1/2 cup Bottle Gourd (Lauki) Chopped
  • 1/2 cup Pointy Gourd (parwal) Chopped
  • 1/2 cup Colocasia (arbi/Kochu) Chopped
  • 1/2 tsp Turmeric Powder
  • 1/2 tsp Mustard Seeds
  • 2 pcs Red Chillies Dried
  • 2 tbsp Refined Vegetable oil
  • Salt to taste
  • Water as Required

Instructions
 

  • Soak the sun-dried banana peels in water for 30 minutes to rehydrate them.
  • In a large pan, heat the oil and add the mustard seeds. When the seeds start to crackle, add the red chilies.
  • Add the chopped vegetables to the pan and stir-fry for a few minutes until they are slightly softened.
  • Drain the sun-dried banana peels and add them to the pan. Add turmeric powder, salt, and water as needed.
  • Cover the pan and simmer the khar for 20-25 minutes or until the vegetables are fully cooked.
  • Serve hot with steamed rice.
